How To Make Crouton

A crouton is a piece of a sauteed or rebaked bread often cubed and seasoned, that is used to add texture and flavor to salads notably the Caesar salad, as an accompaniment to soups or as a snack food.

Ingredients:
6 slices bread
1 tablespoons olive oil
salt to taste

Procedure:
1. Remove the sides of the bread, then slice it into cubes.


2. Put in a baking tray then sprinkle with olive oil and salt.Pre-heat the oven to 200C then bake it for 4 minutes or until done.
3. You can store it in a jar and use as salad or soup toppings or as a crispy snack anytime you want it. :-)

I love it on salad :-)

I cooked this because a friend is requesting it so badly :-). According to the people who've tasted this "so yummy"! 

Ingredients:
1 kilo pork (sliced to your desired size)
 3 cloves garlic
1/2 cup soy sauce
1/2 cup vinegar
1 cup pure coconut milk

Procedure:
1. Saute the garlic then add the pork and simmer for a minute then add the vinegar and soy sauce then simmer  over low fire until the meat is tender.
2. When meat is tender, add the coconut milk, salt and pepper to taste, then simmer until done.
3. Serve with love and do not forget to smile :-)


Tips: for extra yumminess marinate the pork with calamansi and soy sauce then brown the pork in a little oil and set aside and just follow the procedure.

If you want more gravy just add more coconut milk.

Weekly Menu

Another pretty chill weekend soaking up the last weekends of summer.  Cleared out some of the garden to make way for some lettuce which should be ready by the end of September, just before any risk of frost... can't believe I'm saying frost already while it is 80 degrees outside.  :(

Have you heard about nitro coffee yet?  Cold brewed coffee put through a tap kind of like Guinness.  It gets this frothy head and tastes really smooth.  Also, twice as much caffeine (so it is served in a smaller cup)!  Try it over at Five Bean in Reynoldsburg...

Today was my fantasy football draft day... also known as the most stressful hour of this weekend.  Ugh... I don't even care about football... but for some reason I play anyway.  Then pop up showers for the remainder of the evening made the puddle behind Kroger officially lake status.  The sunset was reflecting in this mosquito breeding ground as I walked home with my groceries.  One of those moments you need to stop and smell the roses... :)

All of those habaneros in the first picture will eventually get made into jerk chicken... but I'll save that for the weekend.  So here is the plan for the week...

Cherbourg Bakery Review

Last weekend, while trying to find somewhere to go for lunch in Bexley, we found this little cute little bakery on Drexel.  I'm constantly on the hunt for the best chocolate chip cookie in town (currently a tie between Patty Cake Bakery and Sharon's cookies found at Lynd's Fruit Farm market).  Every time I see a bakery, I must stop and try their cookies!

We stopped in Cherbourg Bakery only about an hour before closing.  As such, there was a limited selection from their menu available.  Everything is gluten and nut free, so it's a great option for people with allergies but still have a sweet tooth... great find since we just found out my nephew is allergic to tree nuts.  The menu spans from muffins and brownies to donuts and cupcakes... a little bit of everything!  

They are known for their lemon bars, espresso brownies, and smores bars... luckily for us they still had one of each of them so we could try them!  Along with an iced pour over coffee, we nibbled on all three and saved some for later.  While I can't say they were the best brownies I've ever had (that includes some fierce competition), they are certainly high on the list.  Everyone has their different preferences when it comes to baked goods, so you may find that these top your list.  :)  They are a little drier than I normally make mine which makes it taste like the edge pieces.  And based on this pan, people really love edge pieces.

We will definitely be back to try some more goodies from their menu... the tiramisu cookies certainly caught my eye (but weren't available) and maybe a few breakfast items!

Sopas For Sale Version

Perfect to start a small business. Easy to cook and affordable. :-)

Ingredients:
1 kilo Elbow Macaroni
3 cloves garlic
1 onion (minced)
1/4 kilo chicken breast
7 litres Water
3 pieces big carrots ( diced)
1/2 kilo cabbage ( sliced)
1 can (300 grams) all purpose cream (Nestle, Magnolia, Alaska, etc)
spring onion
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the chicken, salt and pepper,  simmer for few minutes.
2. Add water and bring to a boil, when boiling, add the elbow macaroni then simmer until almost tender.
3.Add the carrots and cabbage then simmer for a minute.
4. Add the all purpose cream, spring onion, salt and pepper to taste then let it boil once and turn off the heat then serve. Do not forget to smile :-).

Sweetened White Kidney Beans

 Today I have decided to make a sweetened white beans because I have some leftover from my salad yesterday.Delicious sweetened white beans. White beans are loaded with anti-oxidants and  good source of fiber and protein.

Ingredients:
1 cup water
3/4 cup white sugar
2 cups cooked white Kidney beans
Cooked white beans



Procedure:
1. Caramelized the sugar, then add the water and simmer until dissolved.
2. Add the cooked white beans then simmer until done.


3. Serve anytime or use as topping if you make Halo-halo. :-)

Weekly Menu

While I hate that summer is "winding down" because that means winter is coming... it is basically the best weather of the entire year!  Not too hot with crisp mornings and sunshiny days.  We still have a month left!  So ignore those sweaters and boots at the store and the back-to-school/summer is over messaging (unless you have kids, please send them back) and go celebrate summer outside for another month!  :)

If you have a veggie garden, it is probably bursting at the seams.  Everyone always seem to have excess zucchini, but we always end up with excess hot peppers!  Habaneros, jalape�os, chilis, and now poblanos.  The trick seems to be having two plants, somehow one plant produces four peppers, but two plants produce 200!  So for the next couple weeks, Mexican food will dominate our meal plan... which I am totally okay with...

White Beans Salad

This is an easy to prepare salad that you can make for your loved ones. It tastes very good, the nutty flavor of the white beans plus the flavors of the other ingredients  were perfectly blended.White beans are loaded with anti-oxidants and  good source of fiber and protein.

Ingredients:
500 grams White Beans
2 cups Frozen Green Peas
10 Crab sticks ( sliced )
salt to taste

Procedure:
1. Cook the white beans in a pressure cooker for 15 minutes ( timer starts when pressure cooker starts to sizzle, or boil in a pot for an hour or until tender. When cooked, wash in running water then drain.
2. In a mixing bowl put the beans, sprinkle with salt to taste then add the crab sticks and green peas, mix until fully combined.
3. Serve with a smile :-).

Pop & Store Document Boxes

I have really been working on streamlining our home lately. My goal at the beginning of July was to get rid of anything in our house that we did not use or specifically cite as one of our favorite things. So far it's been working pretty well! 

Since we don't have a designated office space like we used to, all of our office items are out in the living room... books, chargers, notebooks, papers, writing utensils... and ever since we moved in, it has been driving me absolutely crazy! 

I have searched and searched for a system, and I believe that I finally found one! Pop & Store Document boxes! They really streamlined the look of our living room. I love to keep all my old planners but I didn't love seeing them on the living room bookshelf every day. 





Some of the coolest features of these boxes are that they have scratch resistant surfaces on the bottom, that they are so durable, that the foldable aspect of them makes them reusable and super easy to store, and that the metal-enforced corners keep them from getting frayed!




Having a sleek way to hide those items has really created a more cohesive and zen little look in our living room. I also love these boxes because they are so sturdy and durable. They are perfect for stacking and storing heavy items like books or hiding stacks of paper. 


I went with document boxes because I have ridiculous amounts of paper to deal with. However, the Pop & Store system comes in several different sizes in order to help you store whatever it is that you need to store! Think: crafting supplies, magazines, electronics, etc! 



I recently made the transition from teaching in private schools to a public school and the thing that has just blown my mind is the amount of paper public schools use! Daily attendance, rosters, flyers, questionnaires, memos, reminders, schedules...




The list is literally endless (probably). I have  a nice little stack of paper that I'm so excited to get organized into these boxes. If I were using them in a dorm, I would probably create little "class kits" and keep unsightly textbooks, rough drafts, syllabi, folders, etc. in them! 

Additionally, these boxes come in a variety of (very collegiate) colors. I chose white since that goes along with the very bright and neutral theme of our living room. However, there is a blue that would have been perfect for my college!

Seafood Fried Rice

Superb!!


Ingredients for 5 servings:

4 cups cooked rice
3 cloves garlic
250 grams shrimps
250 grams squid rings
6 crab sticks (sliced)
salt and pepper to taste
green peas 


Procedure:


1. Saute the garlic then add the squids and continue to 
saute for a minute. Then add the shrimps and saute for few 
seconds then stir thoroughly.


2. Add the rice then stir very well until almost  done, then add the crab stick then stir.


3. Add some green peas, salt and pepper to taste, stir until done then serve with a big smile :-).
